Reviewed from (long-standing) notes. Poured from a 750mL bottle into an El Catador Barrel-Aged glass.
A: Hazy deep gold with a good amount of visible carbonation. Forms a half-finger of white head, though it fades quickly.
S: A mix of lactic, malic, and milder acetic tartness. Some red wine vinous character and oak tannins. Biscuit malts. Some musty funk and barnyard – not huge, but nuanced. A decent aroma, but I'm hoping it opens up some as it warms.
T: Lactic and a mild acetic tart (though it doesn't come across as particularly vinegary at all) and citric acid. Tannic red wine and oak. Dry Brettanomyces funk, basement and barnyard and mild pineapple (which increases as the beer warms). Biscuit malts and a saison bready yeastiness. Citric tartness and dry tannins in the hang.
M: An average heft to the body. Carbonation sensation a bit on the low side. Alcohol presence seems average.
O: The first few sips were really quite unimpressive. Have some patience though – as it warms up a bit, it open up nicely. The vinous character fades some, but this allows more saison and oak to come through and improves the beer significantly. While still not great, it's better than the one other sour beer I've had from them (which ended up in the drain). They have been cranking out impressive beers all over the place, but I will hope the best sours from Aardwolf are yet to come.
