A - DARK SOUR!!! Like a sultry mistress beckoning you closer. With a light colored rim that reminds me of a fine Barolo. Little to no head on this pour but I do not find that a detractor as it allows me to get straight to the main course. But I did see several pours with a nice 1/8 - 1/4 head.

S - Sharp and dark cherry. Very appealing.

T - This is where this pilot patch shines. As I speak Mike is filling bottles to send off to a competition and I would hardly be surprised if they win on every account. The sweetness of the cherries balance the sourness to perfection. I could devour this all day long!!!

F - Light mouthfeel that is un-intruding and welcoming. The tingle of the sour plays on your tongue like pixies have lovingly been sprinkling alcohol gently on your palate.

O - A fond memory of pilot batches of old. While other my find critiques with the mouthfeel or the strong cherries. For me it fit perfectly into my education on the enjoyment of beer.

On Tap

Appearance - A murky, yet lively dark brown, almost black. Full deep 1" khaki head that dissipates to a minimal ring. Little to no lacing.

Aroma - Little chocolate, and cherry. The oak chips are there too, just not the forerunner.

Taste - Sour upfront with sweet cherry, and whiskey oak in the middle. As it warms the beer finishes with a little tobacco leaves. And sour chocolate covered cherries. Finishes quite light and refreshing.

Mouthfeel - Perfect amount of carbonation. Quite silky/oily. Leaves me wanting more.

Overall - I would love to see this make the full time lineup. If the sourness was kicked up a notch, this could compete with the best. I'd also like to see this aged in different types of barrels (wine)
