this is a wild brew with pinot noir grapes and sea salt, coolship inoculated too apparently, and a collaboration with the paradox of the east i guess, cool. its got a light pink glow to it from the tap, is surprisingly clear, stained glass toned, with a short white head and a lot of fizz. it smells fruity, vinous, but with notes of red raspberry and cranberry too. more brett than sour on the yeast side, but some of both for sure, interesting without being weird, a hint of rhubarb, seems promising. the flavor is nice, the fruit is obvious, this is wine forward and the grapes present as thin skinned and light, softly tannic, and there is some low oak here. i do get a little cheesy funk to the brett profile, but its not a problem. funk is there, acidity is middle of the road, and the fruit drives this without it being sweet. its maybe not quite as fruited as i thought it would be, like not as wine forward, an accent, to me its the yeast that really moves it, and is cool to have the back and forth between these two sides of it. i like the level of refinement too, its well done overall, and more proof that these guys have really upped their game and are killing it across the full spectrum of styles. really solid!
