This bottle-conditioned sour ale was brewed without hops and fermented with our mixed house culture before resting in barrels with wild yeast and bacteria for 6 months. The beer was then blended and refermented on Southern Illinois-grown freestone peaches before being bottled. This beer has a beautifully subtle fruit character and sourness; the yeast and bacteria combine with the peaches to create a delicate honeysuckle-like aroma with a lightly tart finish and a touch of oak.

i think these guys are getting way better with the wilds and sours, their culture tastes cleaner and more refined to me now, these latest sours they have put out have been of a much higher quality it seems, and nowhere is that more clearly on display than here with all these awesome peaches in here. my friends thought this one was a little simple for these guys, a little bit more conventional and like it could have come from anyone, but i disagree, i think its delicate and refined and balanced and delicious, and i think it fits well in their lineup. the peaches are incredibly natural and ripe, yellow and fleshy and juicy and summery and very honest here, lots of them too. the sourness is a little one dimensional maybe, bacterial before funky, but i think this represents an improvement over some of their previous wild beers, and i welcome it being this way here. white wine notes abound, soft white wheat evens out the feel, and the whole thing is fresh, interesting, and drinkable for how acidic it is. sure its expensive, maybe overly so, but you get what you pay for with these guys. a little less rustic and foraged and all of that, but a really great beer and the peaches are amazing in it! great carbonation, way better than so many others in this style out there right now, and for me worth the price.

Appearance like and orange soda with a light splash or creamy. Deep orange color with part clarity, part haze and a creamy body. Minimal, soda-like head. Mostly oak and wet funk on the nose. Subtle peach juice and acid palate. More funk and oak forward. Mild earth and spice. Underlying sweetness to balance. Moderate to medium body. Slightly sugary. Moderate bubbles. Wet finish. Pretty good overall. I would have enjoyed a bit more peach flavor and acidity.

L - pinkish-red hue, slight off-white head quickly dissipated
S - ripe nectarine, peach, farmhouse funk, ripe melon, apricot
T - very light tartness, peach, oakiness, green melon
F - moderate carbonation, soft and lightly funky
O - impressive subletly, but for the price there are probably other funky fruit beers I would turn to. Still an excellent beer.

Hazy dark orange with a minimal white ring.

Peach is present, but rudely interrupted by really funky basement mold, and a light nectarine skin popping back in to remind you this is a peach sour. The funk dominates on this one, and not in the best way.

Saturated dark orange with rising carb trails and momentary surface skim.

Oak and peach pit aromas, slight wet barrel funk.
Taste is more fruit forward with oaky vanilla in a supporting role. Twangy bittersweet peach pit. Mellow carb and medium bodied, light puckering tartness. Finishes semi-dry. Overall it was tasty and enjoyable, the peach element comes through well. Maybe some short term bottle conditioning would dry it out a little more.

Light clover honey malt aftertaste.
