Blonde farmhouse ale brewed with maitake (also known as hen of the woods) mushrooms, oak leaves, organic Central Illinois-grown wheat, and a touch of smoked malt. Fermented with our house culture, the result is an easy-drinking ale with a hint of coconut and umami.

Mostly clear super bubbly bronzed golden body with a huge white head and thick lasting lacing. Smell is immacualte: the saison belgian yeast is potent, with elements of barnyard funk, earth, grass, with coconut, smoke, oak, and mushroom supporting. Scratch pushing boundaries like this is what makes me love them, even if there are some misses along the way. Taste is way more out there: huge oak, char, smoked malt lead, with wet forest, herbal leaves and general botanicals following. Yeast is bready but not as earthy as smell indicated, has a finish with a hit of coconut, chicory, and dry melon. Feel is smoked, wild with botanical elements, and bready. Wetter than expected, and thins out faster as it warms.
