Green Cathedral sings with bright citrus and herbal flavours, and a mellow pine finish. With 5 kilograms of fresh spruce tips added in two additions to the kettle and the foeder, this saison is an ode to the places the soul of baseball resides: the ballpark.

At The Cookie Bar on Drouillard Rd. in nearby Windsor, leading an outing of The Responsible Beer Drinking Club. On tap and chilled; 4oz. in a flight of seven beers. My 10th beer from the Toronto, Ontario brewery, and 1st for 2026...

Body is unfiltered and hazy straw/pale gold, with bubbly, fizzy carbonation, forming a weak head before spending itself out in short time.
Aroma is fruity and yeasty, notes of orange zest, sourdough, nectarine, and a touch of bubblegum.
Soft, mellow, almost buttery malt, nicely balanced by citrus hop flavour and moderate bittering hops, a touch of residual sugars lingering in the finish; medium body and medium/fine carbonation, with soothing soft feel.
A nice beer, if a touch flat and cloying in the finish, and not offering the distinct flavour you'd expect from the description
