Näcken was the first beer we brewed with Omnipollo as part of the homebrew competition that we’ve run for the past three years (the most recent of which gave birth to Life is a Peach). It was hugely popular so we ended up brewing it multiple times.
For the final batch we filled four Chardonnay barrels which were all but forgotten about until a re-shuffle in the brewery recently, so the beer has been ageing for just over a year with wild yeast. We’ve spiked the beer with Brett and generously dry hopped it with Simcoe and Citra to create this new take on an old favorite.

A 330ml bottle with a BB of 2018. Purchased ages ago from Trembling Madness in York. I have no idea how long I've had this, but given the dates of the other reviews it must be a couple of years old - fingers crossed! The label describes it as a collaborative brew between Siren and Omnipollo that was aged for a year in Chardonnay barrels, followed by the addition of Brettanomyces and dry-hopping.
A: Poured into a Duvel tulip. Bottle conditioned. A bright, hazy orange-amber hue with plentiful floating sediment and intense carbonation. Produces a large head of creamy white foam that lasts for a couple of minutes before reducing to a patchy surface layer.
S: Aroma of musty, fruity sourness with hints of brett, tart berries, cider, lactic acid, earthiness, subtle funk, a vinous quality and faint malt. Little hop character to speak of. Rich and complex - superb.
T: Tastes of musty fruitness with notes of brettanomyces, sourness, cider, mild vinegar, tart berries, lactic acid, earthiness, barnyard funkiness, vinous hints and subtle malt. Sharp, complex and very dry, with little bitterness or hop character.
M: Mouthfeel is smooth, tingly and very dry, with lively carbonation and great body. Light and nicely textured for the strength. Somewhat astringent; dries the palate. Aftertaste of funky brett, fruity sourness, tart berries, earthiness, mustiness and a hint of malt.
O: Outstanding - superb flavour evolution. Looks great, while the aroma and flavour offer a smorgasbord of brett character, fruity acidity and musty earthiness. Any hop presence has long since faded away. Lovely body. No overt sign of oxidation. A complex brew that remains very drinkable for its age, and a testament to the skill of the brewers involved.

Hazed, sweetcorn yellow with a white, even head. Smells gorgeous - 100% how I'd hoped it would smell (and really, judging by the aroma at least, this should be classed as an American wheat beer or a Hefeweizen, not as the nebulous 'American wild ale' - the label describes it as a Hopfenweiss). Loads of pineapple juice, white wine, sour apple, solvents, Band-Aids, preserved lemon, and honeysuckle. Spot on.

Big on the canned pinapple, lime, bitter orange, and rosewater - calling to mind a properly made Mai Tai. Phenolic funk lends intrigue and depth. It's like if Duvel, Schneider Weisse, Cantillon, and The Kernel all got together and had an orgy. Stupidly good. Possible food pairings: sheep milk cheese, mussels, Lebanese food, northern Italian seafood pasta, prosciutto and other light, salty hams.
