a bottle conditioned, brett fermented, biere de garde, a style that i think loves this sort of funky treatment, although this is quite a bit more sour than i was anticipating, not too long in the cellar either, not much more than a year old, but this is fully tart, if not a little vinegar forward and tangy. its malty and rich, both in color and in feel, copper, deep, and glowing, a nice head from the little bottle too, fluffy and burlap toned and lasting quite awhile. it smells and taste like white wine, dried orange peel, white pepper, and old wood, some almost pickled sort of sharpness, but farmy too and rustic. the malt is bready and dense, the ferment is weird and drives this, and the linger is long, even though this isnt all that sweet or anything. quite a complex little offering, still seems to be true to the style as a base beer, even though the ferment is as interesting as it is, and this is well made and well aged and quite well refined really. cool beer, more sour than bretty though to me maybe. i havent had enough from these guys, but the price has seemed worth it each time so far. not for everyone surely, but definitely for me! seems fancy and regal, even indulgent as a solo mission, even as a small bottle. treating myself i guess...
