massive thanks to my buddy for saving this special bottle to share with me, this and so many others of course, but i have become a quick fan of these guys, and this is what they do best, or used to be, apparently all of their funky stuff is now done at sovereign, their sister brewery, so if this ever comes back, it will likely be under their label, similar look for sure. this might be the most wild of their beers i have had, maybe a product of its age now, but its amazing, a blend of different wild beers, wish they gave us more information. its really pale in the glass, less than yellow, less than straw, with an active and lasting white head. its fizzy, prickling my nose even. very light. the nose is amazing, but kind of subtle, green glass funk, iodine and a lambic sort of wildness to it, more ambient and interesting than some of their other saison types, less estery, earthy from all the grain too, some mature brett, white wine oak to me too, gentle stone fruit, but the whole thing is very mild, not acidic to me hardly at all in the nose either. green grape in the taste, raw wheat, pils malt, minerals, everything about this is understated, to the extent that i have to almost try to taste it. some meyer lemon tartness, bretty funk, clean though too, some more lambic and green glass character, minimally malty but the grain still contributes a lot if that makes sense, id love to know about the threads in this blend, it comes together beautifully. pineapple candy and orange as it warms, iron and graphite and light oxidation, i love everything about it.

Cloudy bright gold with a fluffy white head that dies down quickly. Funky nose with lemon zest, wet cork, barnyard elements including hay and funk, and floral wild yeast. Feel is important to go next because it is effervescent and dry almost like a mild champagne, with great funkiness and light tartness. Presents the flavors from the nose in an elevated way, very clean. Wet center has citrus and melon with oak, barnyard funk, brett, and floral yeast in the dry finish. Intensity in both smell and taste are short lived, but it is beautiful while it lasts
