a really tasty pils here done with american grown saaz, which really is the defining element of this, relaxed as it is overall. these guys make a ton of great beer, have for years, but their lager game especially was on point during our most recent visit, really seemed like a focus for them, and this is real crisp and good, drinkable for being so flavorful, real well done. very light and see through, polished up well, and smells fresh but also just sort of smells like a beer, a little straw and hay, a little appreciable lager yeast, and some grass clipping character and light bitterness from the hops, subtle spice there too, good balance, dry to me, lightly doughy, simple but classic, appealing through and through. the flavor starts mellow and stays mellow, like i kind of keep waiting for this to get actually hoppy, but thats not what its about, its about balance, and while the saaz brings a nice herbal grassy freshness to the beer, the bitterness is low and the proportions do not really deviate from the norm, i still get the pils malt at the center of it, a slightly bready lager yeast, faint european character in this, good water chemistry is always obvious in this style too, as it is here. good enough carbonation, lighter in body, some late hops on the swallow and some recall, noble-esque to me. the name makes sense, its clever, either from the standpoint of like you think its going to be a plain neutral lager and it isnt quite, or in the reverse sense that it is in fact pretty basic and crushable but perhaps just different enough to not be baseline level, if that makes sense, i think it can play either way, either surprising because its easy, or surprising because its flavorful too, and while this is just a lager, its also a good one, the right amount of hops, highly drinkable. the beat goes on for standard...
