Berliner Weiss beers are considered to be among the most refreshing in the world and a regional favorite around Berlin. Napolean's Army even considered this sour wheat beer to be the "Champagne of the North" due to it's distinct lively character. Our take doesn't stray to far from the tradition with a mix of Pilsner and Wheat malts and German Ale yeast. Lactobacillus brevis and Plantarum ( yep.. A probiotic in beer and the same found in some yogurts and breads) combine to add the distinct lactic acid flavor (sour/tart). Hops are not a major player in this style and are left to a meager 4 IBU.
