an ever so lightly tart hazy pinkish orange clean saison done with hibiscus and rose hip. its simple, almost too minimal on the ferment with a french type strain thats well restrained, nothing interesting or spectacular at all about the ferment, not in the least, but its subtle enough for the floral and herbal elements to stand out. i was immediately taken by the bitterness, not from hops but from botanicals it seems here, the rose hips maybe especially. white tea notes in the nose, jasmine, and white peach too, with more of a tangy raspberry fruitiness in the flavor and some definite sweet herbal hibiscus on top of the clean white wheat malt and light pils base, simple stuff here, but well executed for what it is. i wish for a brett pitch though, some time in a white wine barrel, and a little more character overall. neat almost astringency from the added ingredients too, plays well with the light lactic element up front, and dries the finish out. good carbonation to this, a lighter medium body with some softness, and a mineral profile behind it all. springy like after a fresh rain. cool recipe, good execution for a clean saison...
