Lambic inspired ale aged for over 13 months in oak wine barrels. Big spicy and fruity notes and brett forward character, with a mellow acidity. Served uncarbonated and at cellar temperature as is traditional.

On tap at the brewery.
Flat, hazy yellow with no head or lacing. The nose has lactic sourness, preserved lemon, black lime, wet hay, horse blanket, mildly sulfury, well integrated and in good balance. A little sweetness is also noticeable. The palate opens with a blend of lemons, lactic acid and some white honey like sweetness. A little sweeter then I'd like, which takes away from the funk, which has a nice blend of mushroom, wet hay and a little bit of horse blanket. Medium in body and still, accentuating the tannins, this beer is great.

This stuff is incredible. I was really excited to see it on the draft list at de Garde. Great mouthfeel and I felt the carbonation was perfect even though it was uncarbed.

Quasi still though it does seem to have very slight carbonation - a thin ring of bubbles sticks to the edges of the glass. Distilled Tillamook funk with hints of citrus drive the taste and aroma - hay, washed rind cheese, musty cabinets, damp socks, hints of barrel, minerality, old hop cheesiness.
