750ml bottle poured into a snifter
A- bottle gushes upon opening, a quick pour into the glass reveals the thickest, creamiest head that I've ever seen from a wild ale that retains forever, eventually leaving some lacing behind. Murky golden/yellow in color
S- aroma opens with a mix of earthy pine apricot, green apple, lemon peel, red berries & pineapple. Dried hay, earthy funk yeast & barnyard close it out
T- tart and fruity up front with lots of stone fruit notes, green apple skin & pineapple, even some strawberry notes. Mid-palate gives some earthy yeast and sweet malts. The finish gives some spruce bitterness and lingers of more tart stone fruit
M- medium body with moderate low carbonation leads to a creamy mouthfeel that continues into a creamy tart finish
O- the spruce isn't as strong as I was expecting, but this one is delicious

Golden straw yellow. White head with lace.
Nice sour with a lot of green. Piny, earthy, and spruce tips. It tastes like northern Minnesota. Nice tartness, light sour.
Really awesome beer. So unique.

Appearance: pours a golden yellow color. A finger or two of a white foamy head. Good retention and leaving behind a frothy lacing. Near the top it's fairly clearly with sediment clouding it up near the bottom.
Smell: pine needles, a faint berry like tartness. Lemon juice and green apple skins. Light pineapple. Small amount of oak and earthy funk.
Taste: opens with a little bit of fruit, pineapple to berry flavor. Then pine needles take over with some earthy spruce. Lemon juice and green apple skin come in with some acidity. Backend has some light funk and oak.
Mouthfeel: really nice balance, acidity, drinkability.
Overall: I was skeptical of the spruce sour but de Garde doesn't mess around. Awesomely flavorful and balanced. Love all the fruity flavors blending with the earthy spruce.

Had a half pour at the tap room. Nice golden color, with good carbonation. Smell is fresh and very "piney". Taste has some tartness and you can very much taste the spruce (if you know what that tastes like). Light body but not watered down. It could be over-powering for some.

Spruce Desay #1 was great and #2 is even better.
Funky spruce goodness and a nice tart bite. Fruity, spicy beer with a balanced acidity.
