This beer is a spontaneously fermented 'double india wild red ale' aged in a blend of red wine and second use bourbon barrels. Our indigenous mix of yeast and bacteria complement the rich malt and hop character and subtle barrel notes.

Full Disclosure: This is a mix between a wild ale, an imperial IPA, and an imperial red. I decided on American Wild Ale because I thought that would best prepare the palate of one who has not had this beer before.
Appearance- Pours up about a one and a half finger's worth of head which has some retention. The head is pure cotton white while the body is a very hazy and dark amber with floaters in it. Pale amber hangs around the edges and the beer shows more of this when it is held up to the light. Some lacing is left behind. What is left behind is sheeting but it is minimal.
Nose- Acetic acid with strong notes of tart apple, strawberry, and cherry. A bit of mustiness balances out these sour aspects. The funkiness of the bacteria seems to mingle with the musty and earthy hops. This fades pretty quickly.
Tate- Lots of mustiness and funk. Lots of Brettomyces leads to horse blanket and straw which counters the pine and woody hops that reside in the background. The tartness of the nose is barely represented in this beer's flavor profile. Very strong pine, wood, and resin on the finish. There's even a little bit of oakiness to it. Very dry finish. The funk works very well with the hops but this is definitely not for novice palates. Some of the tartness of the nose begins to appear as it opens up. No heat shows up at all.
Mouthfeel- Between medium and light bodied. A nice, dry finish cleanses the palate and renders this beer neat. Right amount of carbonation.
Drinkability- Very easygoing. I would never guess this was a 10% beer. 4 dollars for a 250 mL pour seems reasonable.
Overall- Solid beer but I'm not quite sure of the style. It seems like a cross between a wild ale and an IIPA. I imagine more of the wild aspects build with age while the hops diminish. This style (the India Wild Ale) seems a bit pointless as two of the major tastes peak at different times. It would appear that this is also barrel aged (bourbon and wine). Worth a try though.
