A wild yeast strain with Belgian lineage, Brettanomyces Bruxellensis Trois, or Brett Brux Trois, produces delicate characteristics of mango, pineapple, orange peel, and hibiscus. The addition of cherries layers natural herbal notes from the whole cherry – stem, skin, pit in all. Faint hints of sweetness before a bone dry finish, this beer will likely confuse most of you.

Had this on tap Saturday. Came with a nice red body. Looked like a cherry color. Not pink and not amber but a nice red. Good off white head with tiny bubbles. Body was clear of floaties and cloudiness. Smell was ripe cherries with a hint of grape and almost like a faint lemon rind. This beer is very quenching. Drinks like a black cherry soda (not in terms of sweetness this was not sweet) in terms of carbonation and depth of cherry flavor. You get the effervescence right up front and it cleans out the finish as well. Really nice and dry. The Brett works to make this almost wine-like. The ABV makes this beer that much better as you could drink multiple. Really crisp beer with nice well rounded cherry flavor. I thought this was a hit. I'd easily buy a $13/$14 750 mL of this beer. Do not go into this beer thinking it'll be sour/tart. That's not the point/purpose of the Brett use. If you like the Brett use in some of the Lost Abbey or Logsdon beers, then this beer is for you. It creates a clean, dry, and effervescent mouthfeel for the beer and a crispness throughout the mid palate.
