Appearance: Onyx black body. Medium to dark brown head that pours about 2 full fingers tall at cellar temp and quickly drops down to no head. Booze legs on the side of the glass with each sip.
Smell: Nice rye whiskey note; though it does smell slightly fusel. Gourmet chocolates. Vanilla. Light smoke / charred oak.
Taste: Rich and sweet with rye whiskey spice! Very smooth and well rounded rye notes! Fudgy bourbon flavors meld with tobacco and leather. Hint of vanilla and graham crackers. I like how the graham cracker accentuates the rye whiskey barrel notes; it makes the barrel flavors seem much deeper and decadent. All the flavors come together in the finish with a flawless integration of vanilla, rye, oak, and chocolate. This finish is like a perfectly balanced / complex dessert from a 5 star restaurant.
Mouthfeel: medium bodied beer. Low and adequate carbonation. It feels slightly thin, but since this stout is not boozy it works so well with the flavors present in the stout. The beer drinks very easily for the ABV and it does not get tiring to the palate.
Overall: Never had this beer fresh, but right now it is a tremendously fantastic barrel aged stout approaching 3 years of age. I noticed that Willet barrel Dino Smores has alot of flavors present which are similar to bourbon county; specifically the 2008, 2009, & 2010 vintages; just slightly thinner mouthfeel. Perhaps a base beer that is similar to bourbon county's base beer was used prior to adjuncts going into this beer; since after all...this is the brewer who with out a doubt brewed / barrel aged the best vintages of bourbon county in my opinion. It also gives me a good idea of what bourbon county would taste like if they would put bourbon county into rye whiskey barrels without fruit or vanilla (something that I wish that GI would have done a long time ago). John Laffler still makes killer barrel aged stouts! Just at Off color now instead of Goose Island. Its all for the better though.

Nicely put together. The barrel aged treatment here sort of melds with the sweetness yet seems like the base beer's layering gets overwhelmed a little. Great looking with a good smoky chocolate nose. Quite a boozy number.

Super dark, lacking nose other than little boozy , taste pretty hot lots of bourbon. Great mouthfeel. Overall a pretty tasty beer.
