An American Wild Ale made with house bretts, native yeasts and wild cultures from Allagash, Central State, Side Project and Jester King, as well as our own. A complex beer with notes of over-ripe apricot, bergamot, cotton candy and wisps of Nebbiolo grapes from the foedre this beer was aged in here at the Mousetrap. Alluringly tannic and dry, complimented by Mousetrap acidity and barnyard funk.

This is a hard one to define, but I enjoyed it so much I wanted to so others might be tempted.
Poured from a 250 ml bottle to a glass and smelled faint tartness and something else I couldn’t define, but it really piqued my interest. The color was unfiltered orange ish. (I know, poor form) and the foam was quite faint. It looks better than my description, believe me. The taste was pleasant, malts forward, not much bitterness and enough funk to make itself known without driving the entire flavor, something I have never had before and really like it.
The only down side was the quantity- about the time I really started getting into it, the glass was empty. Really want to try it again.

Appearance: rich golden hue with the itty-bittiest touch of haze, a good effervescence, and a thin layer of white foam. I love the color.
Smell: a little vinous; a little funky; a little tart. There's enough sweetness in there as well to give this thing a mild candylike aroma; I really like it.
Taste: sweet up front with a nicely malty flavor, plus just enough sourness to make this beer really enjoyable. The funk adds a nice dimension without taking over the whole thing, which I like. A very good beer indeed.
Mouthfeel: medium body with a decent enough carbonation and creaminess.
Overall: this is a super highly drinkable and tasty beer. Yay for foeders!

Had on tap. Really impressed with this one right off the smell, with lush grape skin and must, sour lime, peach, sweeter apricot, solid sour oak, and hibiscus, to go with the nice barnyard funk background. Taste opened up even more, allowing for depth of funk, tart fruits, especially an emergence of apple, and woody characteristics to flourish. More tart than sour in feel, with plenty of funk.
