It usually takes me a couple of cans to get Off Color's joke about each brew ... but this is my only can, so I may have to guess before I finish this review.
The easy stuff is this: I now have 50 brews from Off Color in my BA file and only one other is a stout, albeit a world class RIS called Dino S'mores. I think of Off Color as Chicago's northside Belgian brewer and some of their saisons rival those of the Motherland. But true to strength, they blend this stout with some of their saisons. Creative.
But, Creativity can't have everything; including Looks... and foam gets sacrificed here. Smells are not your Irish father's stout, but they are interesting given the saison malts yearning to be free (instead of everything being roasted.) Nonetheless, Tastes are the Smells. (And if you can do this in this mash-up, the brewer is better than pretty damn good.) In the mouth, the bubbles and the finish are like a saison with a voting majority of dark malts.
As I work through this review, I recognize two things are missing. First, I have not explained how it is possible to take two polar-opposite styles and meld them into something pretty drinkable. But Off Color has and this is, at least, shows their mastery.
Second, I haven't got the joke behind Cave Draw-erz. But I've decided that's OK. Off Color's graphic artist is a genius. And their sense of humor (and their ales) make me laugh. And if you can do that to a crabby old man, there still is hope for humankind.
