Notes: Semi-Well Behaved Turkeys. A Rubesque Flemish style wild ale aged for a year in Barolo foedre then aged an additional 12 months in a 10 year Russell’s Reserve Wild Turkey barrel (#0583 from Warehouse A) hand selected by Mousetrap staff and Bruce Russell

Initial wafts of concord grape, dried apricots, and mahogany with ample peppery whiskey. A rotund body dripping with wood sugars balanced by nectarine acidity and rife with undercurrents of plum, crabapple, and jasmine tea. Finishes with lingering thoughts of spiced fruitcake, changing autumn leaves, and a small flask of fireside joy.

Label: Foudre fermented wild ale aged in a hand selected bourbon barrel.

Dark tawny red-orange, ample tan foam with some spotty lace. Cranberry fruitiness with some acidity, wet wood in the aroma.Tart and crisp, sour grape and apple butter, very tannic. Dry and puckering finish, fine carbonation. Smooth texture with a fruity, tangy cranberry acidity that is a touch acetic. Wet wood and cereal grains, vague THP. Lingering tannins and cheerios in the aftertaste. Overall it’s a nice dark sour ale, i’m not sure how much the Willett barrel really expresses itself, maybe vaguely in the aroma. Not really described as a Flanders Red, more of an experimental wild ale it seems.
