Notes:
Inspired by classic high gravity specialty ales of Belgium, Snowfort is an Imperial Wit balancing soft notes of chamomile, coriander, and orange peel with strong black pepper and warming alcohol to bring a little excitement to your snow day.

I'm glad I bought Snowfort (probably only a Mousetrap special) and it is a good value at $10.
But, it also is a big Ask of a Wit yeast to work on lots more malt (and I presume sugar) produce 9%. While lots of things can go wrong in the wit's tightly knit formula, Off Color skillfully manages to avoid them (chief being the alcohol is concealed well.) On the other hand, a lot of the style's subtleties also get lost when you almost double the ABV. (Foam faded fast, aromatics were mute, tastes did not salivate and the soft mouth lost out to the ABV.)
I've had two other Imperial ABVs by skilled brewers and they also had the style's subtleties get lost in the ABV. But I have now had six of Off Color's wits and they are learning the style well. Proof will be if they can make this strong one still be appreciated. But my advice, stick to wits suited for six months and their many activities. Winter is not for wits... only the stout.
