Bright yellow gold, sharp clarity with racing streamers of rising bubbles. Compact cap of foam.

Aroma is somewhat acidic with some lemon and vaguely tropical elements.

Taste is sharply sour with some puckering lemon and passionfruit qualities. Rum barrel is pretty nuanced and almost neutral. Smooth edges but still very acidic. We split the bottle a few ways. Interesting experiment, and I really enjoy Oncilla Taxi, but it’s fruit and yeast expressions are nearly eclipsed by the uncompromising sourness.

Bought at The Mousetrap. And sold as a "staff favorite"... which I can believe.
But in rating this tart saison relative to other saisons, it creates problems of translation.
Hence, my low rating relative to UnTappd's average of 4.29 with 66 check-ins.

The Rum Barrel does ameliorate my main criticism of Oncilla Taxi: that it pairs well with too few foods. (If you put lemon on the dish, don't and just drink Taxi.) And saisons in my book, should pair more widely with foods than any other style. Rum Barrel takes the lemon edge off of Taxi and it cut through the oil of pesto. I will save the rest of this 750 ml bottle for tomorrow's dinner.

But in terms of the the price/food/refreshment ratio, nothing beats Apex Predator.
