Since I added this wild without description, I copy from UnTappd now:
Blend of highly acidic wild house cultures fermented in wine barrels for 16 months then refermented with apricots.
While I've rarely miss an offering from OCB since I discovered them seven years ago, I missed the 2016 release of the Market Rate base and, it appears, in 2019 also. Many of the reviews from that period found this too tart or so sour... depending on your palate and choice of alliteration. This 2023 rendition seems to solve that problem by refermenting with apricots, a tender and sweet fruit that cuts through any harsh acidity of the base wild.
If you are as shy of sours as I am, I recommend testing Apricot on tap before buying the magnum. On tap, I found it tart but not too tart; yet glad I bought only a small snifter. Apricot would be particularly refreshing in the summer and would fare well with that fare; providing there was some vinegar in the salad to make the Market Rate seem tame.
Despite this cautious review, I'm a big fan of OCB and give them very good Overall Hugs.
