from Off Color's email for Saison Day--

An ever evolving collaborative project mingling the wild yeasts and native cultures from some of the finest brewers in the country in a single Barolo foedre that was then racked on top of a bumper crop of Michigan grown apricots from Seedling Farms. First blushes of pineapple, guava, and black cherry buttress delicate hues of bruised tangerines and farmers’ market apricots. A brief dash of lime-like acidity erupts like a barn owl hunting and quickly fade to the quiet after the fury in the dark night, leaving flinty mineral tones and lingering scent of perfume alongside tannic peals of dried apricots in its wake. Long flourishes of Concord grape expressed by the slow, slumbering fermentation of the many wild yeasts dance along deeper, more vinous notes of Nebbiolo and pay homage to the wine that graced the foedre for 15 years

Until now, I'd become tired of Wilds... but not from drinking them. I've become tired of avoiding them over the last few years. You see, I'm a saison-head and the Wild also is a rule-breaker and has similar ingredients except for, obviously, the yeast and the Wilds'. And because they are similar, it is hard for me to get what I really want from Wilds ... which is a versatile table ale. But once I accept I'm not going to get that from Wilds, then I open my mind a bit.... which I've been doing lately. So Instead of the saison's refreshment, what I most enjoy about Wilds is the long drawn-out tart. And Miscellanea has a particularly well-balanced tart that finally finished close to dry.

Vol 4.5 also Looks pretty, amber from the grapes. A couple of times the aromatics wafted a whiff of vinegar, but that's probably just the Wild-adverse in me.

Despite my 14 Wilds from OCB, this is my first Miscellanea. Conceptually, it represents the best of this strain of crafting: top micros making ales by borrowing each others' yeasts and brewing that is greater than the sum of its parts.
