Bought two cans from Beer Works who, it turns out, collaborated with Odyssey on this tripel... an impressive one from this micro only 9 years old and not at all accomplished in the Belgian tradition.

Honey is a malt-head's delight with a twist of spice. While not golden (per the label), it is a pretty amber and has an active foam almost to the end of this hour-long glass. Smells are only sweet, mostly malt and heaps of honey. Tastes are reasonably balanced given how much local wildflower honey seems to have gone into this kettle... but hop-heads will not agree about the balance. Full and viscous among pales, Honey is satisfying with a tripel twist of spices I cannot discern well enough to write about, but certainly can enjoy and encourage you to do the same.

What stands out to me is that this clearly has a sophisticated yeast. And that is unusual for the many Belgians I've been drinking from Colorado since Beer Drop (and Covid) started. (Point of interest... mostly from Beer Drop, Colorado is about to overtake Wisconsin as my #3 state on BA.) But know that I've been critical of many Colorado micros for not using or keeping their Belgian strains well enough. Anyhow, Honey's yeast seems special from Propogate Lab. And having a local yeastery may be how the Belgian tradition can be propogated longterm at One Mile High.

Aside from the ABV, I can't drink two of these in a session because of the sweetness. But I will hold the second can from Beer Drop for the right moment and report back. (It might involve dessert.)

6/30/22. The second can did not involve dessert. Honey was needed for stress reduction after traveling and I popped it and immediately recognized my good judgment. (But, I also had half of this Honey for dessert.) Bottom-line: if Odyssey can produce this interesting a tripel while focussed on other styles, I should try more of their Belgos. Counting @ UnTappd.

From Beer Drop. No dating on the can.

It pours a clear dark gold with an inch of foam, pretty good lacing.

Smells of coriander, light banana I think, lots of honey. No perceivable bitterness.

Honey and coriander full blast in the taste, some grain, some sweetness, no bitterness, plenty of alcohol. I'm surprised that I didn't notice the alcohol in the smell, or maybe I did but forgot to mention it.

A bit thin mouthfeel. Not something that I would seek out.
