Poured into a Propolis tulip. Pours a hazy burnished gold amber with a fine two finger white head and lots of carbonation, leaving thick lacing. Aroma of saison yeast, faint caramel malt, Belgian spicing, dried light fruit, faint syrupy sweetness. Flavor of saison yeast, dry earthy wood, tart citrus and citrus rind, hints of light stone fruit, vinous; finishes tart and dry with an unidentifiable astringent bitterness, perhaps from the hops, although there is little hop flavor. Medium bodied with nice peppery carbonation. An interesting dry and tart saison. I had hoped the Birch might add a bit of sweetness to this ale, but it seems to provide mostly a woody, earthy note. A bit too dry and astringent for my taste, but seem to be in form with other dry saisons with the woodsy addition from the birch. As usual from Propolis, interesting and drinkable, but pushes the envelope a bit.
