up there with the best beers ive had from these guys, what a wonderful bottle of beer, courtesy of my mother in law i think, legend! 2022 vintage, funky saison done with chamomile, elderflower, rose, and hibiscus, way cool. the color is rusty light orange, lightly hazy after the very clear first little bit of the bottle, high headed, like two inches of pure white and rather dense belgian looking foam, lots of bubbles, pretty brew, maybe faintly pink from the flowers but its slight. the nose and taste one this are far less generically floral and perfumed as i thought with all of these in here, its more specific to each, which is so cool, especially in the taste, the elderflower is feminine and early, with trace vanilla to it, the chamomile is medicinal, yellow as a flavor, sort of polleny but also herbal and bitter, relatively intense in the mix compared to the others but only there for a bit, the rose is lush and aromatic with a more delicate taste, rosewater-esque but without the robustness, and then the hibiscus is summery and island-like and fruity, pink peppercorn and raspberry nuances, so they play together real well by not losing their own identities, unexpected but awesome. the ferment is great too, not hardly tart at all, subtle white pepper and maybe coriander but not real estery either, its absolutely bone dry, sort of white winey, a tad woody too but not heavy, and the malt is light and compatible, so this really comes together well. the rushing carbonation and the white wine note combine to almost make it drink like champagne, some fermentation maturity to this, a hint of lemon, then just totally gone. i loved this one, super refined and interesting with all the flowers together, and at or near peak to me now for this vintage. one of my favorite beers from a very beery weekend, loved it!
