I really like the label design for a farmhouse brew,. Poured into a chalice, Ostara is amber with an off-white head, foamy, tight, with thick lace.
Smell is fruity esters, pretty intense a little caramel malt sweetness. Too much really.
Taste is subtle and complex. First sip tasted a little off, perhaps diacetyl, but that was either a false taste or something I quickly acclimated. The chamomile really provides a nice floral herb note.
Mouthfeel is light, soft, off-dry.
Drinkability is pretty good, this is one that rewards reflection but quenches well and exhibits a very authenticate, rustic feel. Just a little to malty for my taste in the style, although still in line with the traditional spectrum. Not quite my taste in what is my favorite style, but nevertheless extremely well done.

Poured into a Nostradamus flute glass. Pours a medium coppery amber with a three finger off white head from a gentle pour. The head dissipated slowly to a half finger, leaving lacing. Aroma of biscuit malt, Belgian and saison yeast, lightly spicy and herbal. Interesting flavor, starts very much like a saison, semi-dry caramel malt, and light citrus, but develops a gentle honey/floral sweetness that dissipates into a dry finish, which has light hop and sagey herbal bitterness. The Propolis ales are very subtly flavored, but reward attentive tasting. This one did not sound that exciting from the description, but has a very nice flavor progression that is unconventional and quite good. This may be my favorite so far.

Saison w/bittering and aromatic wild herbs

Definitely an amber-saison...fairly big body for the style, crackery malt, unidentifiable herbs - very floral and rose-y though. I didn't love this though I do like the idea - had a few Propolis beers now and not sure what to think - waiting for one to really leave an impression but havent found it yet.

This one pours hazy amber with a near solid sheet of lightly toasted cream foam. Bitter orange peel, some cracker malts, some bitter herbs, some clay and sweet belgian yeast character in the nose. Maybe some tea and allspice (very, very faintly) in there as well - almost a chicory character on the very finish of the nose. Flavor is thick with belgian yeast character, some bitterness, some tea, some more orange peel, a little dandelion, some bitter oak and ink. Medium bodied with a light carb and a dry finish. This is okay, but not up to par with the other two I've had from the brewery.
