Imperial stout aged for 24 months in J. Mattingly 16-year bourbon barrels before infusing it with peanut butter, Madagascar vanilla beans and Black Ivory coffee.
Black Ivory coffee is created by having raw coffee cherries fed to Asian elephants in northern Thailand. The coffee is "naturally refined" by the animals, and once "deposited," the beans are "hand picked by the elephant's care-givers" before being dried and roasted. The final product is fruitier, more nuanced, and much less bitter than traditional coffee. In 2022, less than 500 lbs of these ultra-exclusive beans will be produced.

Somewhat cloudy brownish-black pour, opaque in the glass; thin yet lasting head, khaki, thin ring of foam inside the glass. Interesting smell of dark roasted grains and coffee, peanut butter. Fine flavor; dark chocolate, bourbon, peanut butter, coffee; lightly harsh bitterness. Medium-heavy mouthfeel; lightly smooth and velvety; a touch of alcohol burn.
The "naturally processed" elephant coffee is a unique take on things. Too bad it doesn't seem to add much to the beer. Overall, the beer is fine, just not great. The flavor and aroma are somewhat weak and unbalanced while the mouthfeel comes across somewhat watery. I wouldn't buy it again, but I'd drink it again.
