Outstanding wild ale. Beautiful, clear light-gold body with a faint off-white head a minimal lacing.
Truly unique aroma and flavor profile. On the nose I get bright funk, stone fruit, citrus, apples and pears, sweet malts, an abundance of herbal and grassy notes, and peppery cracker.
On the tongue I'm pulled in an amazing range of directions. This beer has a strong but pleasant Brett profile, which I've historically been hit-or-miss on, but here I'm digging it's unique personality. Huge breadiness, a strong orange marmalade note, wet grass, farmhouse yeast and funk, a cidery apple, pear, and peach combination, an array of florals and greenery, and a perfect touch of sweetness balanced by a tart, under-ripe fruit note and a tail-end blast of Brett-soaked oak. Incredibly complex, remarkably unique, and highly enjoyable.
