my first beer from these guys is an interesting one, seemingly kettle soured, and dry hopped with the now extremely popular mandarina bavaria hops, which have a nice citrus profile to them, but are otherwise subtle for how unique they are. its a tiny bit cloudy, radiant blonde though, and nicely carbonated, looks great in the glass, just like it should for what it is. it smells socky, which is why i think kettle soured, it has a quick lactic acidity, berliner type, mild though, and then a real cereal dusty new brett thing, like it needs more time to clean itself up. that flavor is off putting a little bit, its becoming too common and seems amateurish, but the hops here are awesome, and the delicate but lively mouthfeel saves it for me. the hops are juicy orangey, dosed pretty aggressively, and it cuts the weird yeastiness with something bright and clean. carbonation is also quite high, giving this a sparkling wine vibe. overall clever beer, but the execution on the wild side is not what it could be, and it left me wanting to try this one in a few months when its had more time to do its thing...

L: Pours an energetic clear cold (SRM6) producing a ½” white foam cap that recedes quickly. A continual flow of bubbles rises from the bottom of the glass, coating the sides while hissing gently. S: Traces of wood quickly fade giving way to light tartness, citrus slight funk and a hint of peach. T: More tart on the palate that on the nose. It’s light and lemony with an oaky tartness on the finish. The finishing juicy tartness is tingly with a trace of astringency and a suggestion of butter, probably from the lactobacillus. Lingering tart, peach and citrus flavors. F: Light body, very highly carbonated with a light carbonic bite contributing to the tart and very dry finish. Very crisp and refreshing. O: A very well done refreshing drink.
