The opening of this bottle is accompanied by a loud hiss(almost a crack). Brown foam erupts from the spout, splashing on my back porch. My first pour, along with all pours to follow, were capped with tons of unwanted foam. It all takes a few minutes to settle, but it's worth it. The nose is sweet and the presence of the sherry is definitely there. However, the taste reveals almost no barrel or sherry to note. I assume the base stout must be decent because this is pretty tasty. As it warms the woodieness comes around a bit but other than that it is a nice sweet stout w/bitter chocolate. Very thin feel with decent carbonation. I would have loved to try this fresh, because im pretty sure that at this point it is a shell of what it was at its prime. After initial thoughts that this could be infected, I'm glad that it wasn't off(it just appeared that way). I like this brewery and hope to try more of their barrel aged offerings in the future.

The thinness and carbonation are way off here. Calling a beer "Ink" should indicate that the beer is dark and viscous.. This just isn't. But.. The smell and flavor are really really good. I just wish it had the mouthfeel and viscosity of a proper stout.
