The temperatures may be falling but the imagination at Blue Stallion is just heating up. Teaming with local Ethereal brewers, the popular German-style gose meets a tropical fruit addition to add complexity to the natural citrus, apple and melon character of the base beer.
Bright straw and with a light translucent glow, the beer shares a mild pinkish hue from the colorful dragonfruit. A zesty and sprite froth swells and quickly collapses upon itself for a still but peppy appearance. Tangy aromas of cider, white wine, citrus and tropical fruits capture an essence of hawaiian punch with the soft must of the sea. Sweet and sour on the palate, a hint of sour patch kids ride on the heels of wheat and pilsner bready sweet flavor.
The sweetness dissolves on the middle palate and the bright fruitiness takes center stage. Lime, lemon, crabapple, sour green grape, gooseberry and kiwi flavors meld seamlessly with the exotic and slight robust tropical fare of passionfruit and dragonfruit. Low on hops, its the brazen sourness of the lactic fermentation that chases a clean and acidic finish as a return of sea and brine return.
Giving the light bodied beer a little more robust and bright flavor, the mild salt additions add a fullness to the beer's flavor without sacrificing cleanliness or crispness. Perfumy coriander allows for a finish of orange peel bitterness and earthy burlap after palate.
