Stone fruit meets tropical and herbal as Blue Stallion's Galaxy and Azacca hop fueled IPA gets the brewers into a Midwest hophead way of thinking.
Burnt orange and skirted with an eggshell sheet of froth, the stone fruit presence comes strongly while hints of tangy citrus, tropical and berries come in secondarily. An herbal perfume comes as the taste leads in with caramelized sweetness, honey and a candied nuttiness.
The sweetness reduces to a strong simmer on the middle palate, but in full support of the growing hops. Apricot, peach and dates rise from the Azacca while the Galaxy provides an exotic tropical fruit roundness of lime, gooseberry, verbena, chive and sassafras. A peppery bitterness comes with the woodsiness of cedar while its resinous character is spicy and broad across the finish.
Medium bodied and trending malty-dry, the classic balance of Midwest IPA is modernized by the new brands of hops as the ale finishes bittersweet and spicy. A long linger of mulled fruit peels, gin-like herbs and woodsy bitterness outlasts the malt in IPA expectance.
