This Dark Nordic Saison was made in collaboration with @borgbrugghus and inspired by the wild countryside of Iceland. Brewed with arctic thyme and aged in an oak foedre with keremeos plums and wild yeast.

June 2, 2017 update:
After some time in the cellar, this has matured incredibly well. The Brett has been at work, and it's much more lively and carbonated. Pours a great head, good retention, and even some lace. Thyme has faded and the plums seem to have come forward, really nice.

Hazy, copper brown with an off-white head, thin ring of retention shows some lace.
Saison aroma (spicy & floral), but somewhat savoury.
Nice biscuity malt, light caramel and nut, slight earthy funk, hint of plum, balanced bitterness.
Light to moderate body seems a bit thin.

Opened New Years Day. (Price ~ $15-$19 for 750ml)
Unfortunately didn't take detailed notes. Colour was medium brown with a light caramel head, smelled much more tart/brett-y than it tasted. Much more mellow / funky with a nice woodsy fruit base. Didn't get a lot of the thyme in the beer. Classic saison body but slightly more mellow due to the aging. Lovely beer that you would like to try again, unfortunately a bit pricy depending where you live, though at least they give you a full 750 of it.
