The Cardinal is a Flanders-style ale that begins as a Belgian red ale. It is brewed and then barreled with cherries, lactobacillus, and brettanomyces. This process is replicated two more times over the course of 18 months. All three batches are then carefully blended and bottled to form the perfect balance of oak, fruit, funk, and malt. This beautifully unique wild ale is perfect for aging as it will continue to mature and transform over time.

Delicious ! Was told to stop at this place and glad I did only wish I was able to try their Cardinal with raspberries.
This drink really smooth, kind of had a wine feel and you get a subtle barrel taste. Glad I bought some to bring home.

2015 Bottle
A: Moderate cherries, slightly funky sour, bit of malt sweetness and wood.
A: Deep red, almost amber color, pretty clear with a fair amount of head and very solid lacing.
T: Tart cherry flavor, mixed with slightly sweet malt base, with a slightly woody finish.
M: Medium bodied with moderate carbonation. There is a moderate amount of acidity, though pleasing on the palette.
O: Very delicious Flanders Red; the cherries, slightly sweet malt, mixed with the oak character make this beer complex and quite enjoyable.

Appearance is deep red, medium carbonation, decent head, great lacing and retention for style
Smell is sweet berries, cherry mostly, funk, oak, bread, light caramel, and wild yeast
Taste starts off with dominant that are both puckering and sweet, also a hint of citrus once it warms, malt profile is light but provides good chewy balance when needed, not too sour and too cloying
Mouthfeel is medium bodied, notmuch booze in the flavor, most enjoyable when coldest
Overall it was a nice introduction to this brewery for me, well balanced for the style, looking forward to trying other beers from them

Great kinda like a sour wine snd goid amber mixed id by again but 15$ a bottle only once in a while goid beer tho over all
