Day 21 of the 2021 Advent Calendar. Poured from a can into a pint glass. Pours deep red with a nice white head. Smells of caramelized grain and bright fruit. Tastes of grassy caramelized grain, very nice profile. Beer is light bodied and easy drinking, good carbonation. Overall, a very good beer.

Four years ago I panned Mobcraft's Odetta de Sahti, a brett that was too tart to enjoy. Ode To Sahti is an interesting and well-balanced ale. Mobcraft is getting better at this obscure style... or, at least, learning not to try to do too much because too much has a greater tendency to fail. I'm glad I tried this Ode.

I will have more from Mobcraft as the years progress and watch how their different business model proves itself.

This beer pours brown. The head is about 2 finger, and off white. The bubbles in the head are quite small, and it's long lasting. There's some nice lacing on the glass.
The aroma is interesting, and I'm sure I am not getting it all. I get some berries and some pine on the aroma.
Taste - I am getting a ton of flavors here, and I know I'm not doing justice to this beer. I am getting pepper, berries, malt, brown sugar, dark fruit - and I'm sure there's a lot more I just can't describe.
Body is decent, and the beer does linger in my throat.
I don't have a lot of experience with the style, but I do know this beer is really tasting amazing. Pleasure to try.

Poured from a 12oz can into a tulip at 45 degrees,

Look: Pours a beautiful dark brown, but slightly copper, amber color. Definitely a copper tint. Opaque, but completely. A pale white head that is not quite faint.
Aroma: Smell of mostly cocoa, but floral and grassy
Taste: Pine and grass at the forefront. However it is sweetened by roasted chocolate, caramel, and toasty breaded malts that lingers on the tongue. There is a slight leathery and earthy funk present from the wild yeast. No sourness detected. Nor bitter as the malted sweetness comes forward quickly. My only complaint is that the pine and floral favors fade away into the breaded malts as the beer sits.
Feel: Medium bodied and minimal to medium carbonation. Slightly resiny.

Overall: This is an excellent beer. It encompassess a piney flavor without the hop bitterness we have come to expect in a west-coast IPA. Pine, grass, and earth flavors from the juniper and spruce, however it finishes like a darker, sweeter, and malt focused beer. This beer magically combines the hop flavor of an IPA with the sweetness of a dubbel or bock beer. Quite a masterpiece really. Would recommend to anyone who likes IPAs, Belgian Saisons, or darker, malty beers.

Appearance - The beer poured the color of rusty water with a white head.

Smell - The spice came through in the nose with a big spruce and ginger presence.

Taste - At the front, it comes off as a semi-sweet white wine. The profile is bery grapey with hints of spice, including ginger, orange, and juniper. There is a dry oaky presence toward the back.

Mouthfeel - The carbonation really dries out the aftertaste. I am tempted to take a glass of water with each sip as a chaser.

Overall - Sahti is a rare but delicious style. This is a nice attempt, but leans too dry.
