A traditional Saison, lightly golden in color with lively carbonation. A wonderful nose of white pepper, spice, and fruity esters transitions to a husky, rustic, slightly grainy flavor which melds nicely with the fruity, peppery notes before drifting to a pleasant dryness.

M - Nicely carbonated...almost tastes like a champaign; A - seems to fall short on aroma, light; Overall a nice drinking beer for summer, thought I wish it had more depth

really subtle take on the style, i expected big french saison yeast aromatics, but its not there, more belgian spice than winey fruit in here, which is great. mild grassy herbal character and a prickly spice from the yeast which is exacerbated by vibrant carbonation in here, exactly what i like in the style. even more, its super dry, finishing quickly but full of flavor. hopped low, but it doesnt need it with this yeast, which is new to me and i want to taste and understand it. i cant get enough of this, its so creamy feeling, and the wheat malt base is just big enough to support all thats going on with the yeast. a little protein heavy feeling i think, odd but compatible, and again, the carbonation helps a whole lot. i could pick this out of a crowd, and lately thats been a trait i really look for in a beer, especially an overdone style like this. diebolt is up and coming for sure, i see why they won the medal, and may have a few other hardware worthy recipes including this one.

My wife had an art opening yesterday at Grand Salon, and Diebolt is one of their nearby neighbors and provided beer for the show. First and foremost I have to say I was really impressed that Diebolt did a keg of their saison for the event. I figured they'd do a pale ale or something, but, suprise!
I took a couple of bottles home poured off of the keg for later. Pours a pearly honeytone with short, dense head and adequate carbonation. Looks much better in a glass, but even in the Solo cup it looked pretty promising.
Smells like melon, apple, and has a really nice spice character and some funkiness. Maybe even rose in the nose, and light booze. Tastes sweet and fruity, but has some dryness and an herbal background that keeps it from being too cloying. Again I get melons and just mellow fruit, and the lightest bitter backing. Medium mouthfeel and I think perfect carbonaton.
Overall I like this saison a lot, and glad to have another local option. I'm sure wider distribution is to come, but until then I might have to head over to their brewhouse to check out some of their other offerings. Masterfully done, and I need more of this.
