The brewer calls this a "Winter Saison," and it certainly has the alcohol of a big winter brew. Pours a handsome clear amber in the Belle-Vue glass. Decent foam and a pleasant sudsy mouthfeel. Very fine-grained and explodes with flavor on the tongue.
Rich and malty with a seriously spicy taste. Tangy but not tart. It doesn't taste like yeast so much, and the drying effect is not so powerful. A good dose of the "umame" meaty flavor with a little barnyard aromatics. Some fruity taste, but it's more savory than sweet. A little salty. Not really tasting of alcohol, though it is warming going down the gullet. This is unmistakably a Saison but it's hard to pin a tail on the interesting and complex flavors.
A very drinkable and lively, but rich and rounded Saison. This seems extremely well made and another reason to check out this brewery. From the 22 oz bottle purchased at the brewery tap room in northwest Denver.
