Appearance: chalky, yellow-beige. Blonde; pollen color. Totally opaque. The head is a stubborn, rocky head of white.
Aroma: nearly non-existent. Very light. There is some peppery must from the yeast, but so slight. Very little, if any, hops. No aroma hops. There is no indication by aroma that this is an IPA.
Flavor: I don’t know what to think. It’s hoppy as hell with a spice like eating mustard powder. There is a noticeable mushroom flavor; earthy, woody for sure – even almost a seaweed flavor. Interesting. I’d love to see this yeast strain in a farmhouse or fruit sour beer.
Mouthfeel: spritzy as hell, like all the carbonation focusing on your tongue with micro bubbles. Tingling.
Overall: I’m processing what this beer is. Enjoyable, but I wouldn’t buy this beer again or drink it regularly. I prefer all other Odd 13 beers (to date) to this one.
I’d call this beer and education. You’ll gain an understanding of this yeast strain. Is it the yeast that’s spicy or the hops? As this beer warms, the hops become much more pronounced in flavor and spiciness – aImost like a mild salsa.
