A brew in honor of Delaware's first known bartender. It is rumored that "Wildcat Sally" was attacked by a wildcat on her way home from work one night. A tough woman like that deserves her own brew.

Pours light translucent gold, minimal tight head. Typical saison notes - pear. Mouthfeel is full and smooth, slightly sour up front with pear and apricot notes, finishes smoothly and lightly bitter, hints of the malt. An absolutely lovely Saison and would only wish for a more prominent nose that rely foretells what's to come.

Pours a hazy orange with a very little white frothy head. Citrus, pepper, fruit notes, and yeast aromas. The taste starts spicy, with the pepper and citrus coming through, somewhat tart, then moves to a subtle banana and yeast flavor. The yeast and banana come through stronger in the aftertaste. Smooth medium mouthfeel with some harsh spice on the palette, but overall a tasty beer. A good farmhouse ale, has all the right elements, and is crisp and refreshing.
