The grand finale to this year’s Wild & Wood releases is Leftover Limes, our Flemish farmhouse ale with Brett and limes. Bright, nuanced and a little bit funky, just like you.

Leftover Limes, a part of SoPro's Wild & Wood series, was a limited, SoPro Taproom-only release at the July 1, 2017, We Can Sell You Beer Party!, only on draft, and in Dec. 2017 in 16.9-oz. bottles. Had on release at the taproom on draft into snifter.
Pours medium gold with clarity, but on second pour from bottle cloudy tangerine gold with yeast dump, and 1-finger, fizzing, near-white head, which soon drops to a persistent film, leaving some specks of lace down the glass. Poignantly sour fruit, sweet citrus and big spice aromas off pour, with a hint of coconut, then aromas of big, sweet melon, Brett funk and tart lime, with some cracker malt aroma beneath. On tasting, begins crisp, sweet lime, with coconut, joined by some spice, then a little nice Brett funk, all over a base of neutral cracker malt, before a drying, crisp, yet fruity lime finish.
An interesting experiment, aging tons of limes on Flemish Brettanomyces yeast in oak barrels , but the Brett is mainly limited to the aroma of this "lime in the coconut" farmhouse ale.
