Collaboration with Natchez Brewing Company.
A collaboration with our Mississippi friends at Natchez Brewing Company, Crop Circles is made with wheat malt, buckwheat, and pilsner malt. It was soured with Natchez house cultures in our facility, then refermented with Brett C and 1lb per gallon of pink guava. Clean tartness, pink lemonade, and rustic earthiness greet the palate with a funky finish complemented by aromas of guava, pear and strawberry. This beer is ready to drink but will continue to develop in the cellar.

Crop Circles was released at the SoPro Taproom in December 2017 in 16.9-oz bottles, and then in local markets. Had soon after release at the taproom, poured from 16.9-oz. bottle into tulip.
This “Provisional Wild Ale,” a collaboration with Natchez Brewing, is brewed with buckwheat, wheat malt and pilsner malt, and refermented on Brettanomyces Claussenii and pink guava. A bit sour, a bit fruity, a bit funky, a bit malty, and very drinkable.
