Rustic AF Biere de Mars co-pitched in stainless steel with Brett Brux and a Biere de Garde yeast. Essentially a bunch of fancy words for a great time.

Part of the Wild & Wood series, Apocrypha was released in March 2018 at the SoPro Taproom on draft and in 16.9-oz. bottles and the next month for limited distribution. Had at the SoPro Taproom on draft into 10-oz. tulip, and also poured from 16.9 oz.-bottle into tulip.

Pours melon-gold with clarity, until bottle dumped and then some sediment, and 1-finger to huge, creamy, near-white head, which slowly dissipates to a persistent film, and leaves some beautiful Belgian lace down the glass. Floral, mild saison spice, sweet melon and (a bit of) bitter herbal aromas off pour, with melon and spice aromas continuing as warms into aromas of (a little) tart citrus and finally mild pilsner malt. On tasting, begins crisp and mildly but tartly citrus, over moderate pilsner malt, which continues into nice, deep, sweet melon and a little mild saison yeast spice, and then a drying, mildly fruity, moderately bitter herbal finish.

Very interesting but balanced table beer, jazzed up with a hint of citrus. Have as of 2024 given up on the next release of Apocrypha.

definitely one of the beer highlights of my trip to new orleans this week, somehow we got on the topic of the biere de mars style, and then we had the opportunity to drink this one, which stands as one of the most interesting and highest quality beers i have had in this style in years. i was at first a little gun shy with the $13.99 price tag on the bottle and tall, but the beer in the glass quickly justified the purchase. awesome art and a pretty beer, the lightest rust color and a tall and lasting saison looking white head, airy but also kind of thick, great clarity until the very bottom. aroma is great, a little astringent tang and funk, but all up front, and then a rich harvesty grain base, light apricot and red apple fruitiness, a hint of cider vinegar but this isnt sour, and a light toasted woody note and a little brett, really compelling. some white wine character to the taste, but made deep and interesting by the grain. it tastes like a french saison strain with a little more maltiness than i am used to in the high wheat saisons, this feels fuller and with some starchiness as well as middle sweetness, but oh boy does it work well. its a young brett profile, but i dont need this any more funky than it is, and in this style, i like the saison yeast out in front of the wild element. a little twang of acid, some dried orange and almond character, hay and straw and dried apricots and mangoes, this feels almost healthy to me! epic carbonation is just what it needs, and it finishes far drier than ever seems possible earlier on. i couldnt be happier with this, a near perfect example of the style, but distinct enough to stand out from others and be memorable. a total winner, as good as these get! they should be really proud of this.
