Barrel-aged Chateau de Bones was released in March 2019 at the SoPro Taproom in 750-ml. bombers. Tried at the April 2019 SoPro Pop-Up Taproom at LD’s Beer Run, Jackson, Miss., on draft into pint mason jar, and later had poured from bomber into tulip.
Pours cloudy melon-gold with a huge creamy near-white head, leaving chunky lace down the glass. Floral, mild citrus and red berry aromas off pour, and continuing, joined by lots of passionfruit and some earthy herbals, and a hint of pilsner malt as warms. On tasting, leads with definite mild pilsner malt, which contributes a smooth base to the otherwise crisp liquid, then a lot of fruit--including melon, white wine grape, some sweet lime and lots of red berries, before an earthy, herbal, moderately bitter, crisp, drying finish.
This Brut IPA is, unexpectedly, a little cloudy and medium gold, but fruity in the extreme, and having been aged in Sauvignon Blanc barrels, even more champagne-like than the non-barrel-aged version.
