Katabasis, a limited release in the Wild & Wood series, was released only at the SoPro Taproom, in January 2018 on draft, and in March 2018 in 16.9-oz. bottles. (Finally) had in July 2020 poured from 16.9-oz. bottle, labelled "2017," into tulip.
Pours deep amber-gold, with clarity first pour and more of a red-gold melon purée when bottle dumped for the second, and a huge, creamy, off-white head, with excellent retention, pulling a thick coating of lace down the glass. Aromas off pour of sweet stone fruit and lots of saison spice, including mild pepper and sweeter kitchen spices, then cracker malt aroma, and as warms mild melon and more saison spice aromas, including some savory spices. Begins full-bodied and melony, then moderately tart and very crisp, before the melon (or perhaps plum) returns, carrying over a nice cracker malt base, and some (not much) Brett funk, into a drying, peppery saison spice finish, with a bit of lemon zest tartness to boot.
I'm going to check my cellar for more Katabasis. Because: This beautiful beer is full-bodied yet crisp, with mild and tart fruit over cracker malt, then a drying, spicy, zesty, lemon-tart finish.
