usually i am not huge on this type of saison, the too clean americanized simple type, most of the time it might as well just be a belgian blonde, but this one is pretty good, even if the yeast profile is somewhat predictable and unexciting. i think part of it being good is the proportions, i can taste and feel some wheat, the yeast is french type, ester forward, but not done so hot that it dominates the flavor profile, and there are some cool grassy hops giving some earthy depth to the back end that i didnt notice and appreciate at first, but would seem like they were missing if they were gone to me now. its bright in feel, still with a medium body but the carbonation is right for the style. i get nuances of white wine and stone fruit from the yeast, a belgian spiciness in the foreground, and enough wheat for it to remain grounded. would this be better if it were more rustic? yeah, but the refinement is also what saves it from being mediocre, like the quality is high even if the recipe is a little lame for a saison. i want someone to make cool, old world saison in this part of the world, and its a shame its not really happening yet, but i appreciate these guys a lot and think its cool they are packaging this one, its objectively solid from a quality standpoint and i am happy with it as a flavorful drinker. someday they will brett this and ferment it in oak...
