an incredibly unique beer, not sure i have ever seen olive blossoms in a beer before, so i was mightily intrigued to try this one. it pours a little thick and murky looking, and is rather malty as they go, i was expecting a far more delicate beverage, but that did not detract from my enjoyment of it. creamy textured and very fluffy and wheaty, i think its a nice way to extend the olive blossom, which is somewhat more subtle than i expected it to be, it rely doesnt taste much like olives, but there is a cool floral bitterness to it, similar to something like what elderflower does in beer, springy but bitter at the same time. this is a little more vegetal with a honey note as well, but its sort of like that. it almost stands in for what hops might do, although quite a bit more mild here. the yeast is great, it dries the beer right out and adds a mild spiciness to it, this is just full of flavor, and full bodied enough to work in all seasons. this has food beer written all over it too, from interesting cheeses to earthy root vegetable dishes to even sweeter courses, this has me inspired. cool use of a weird ingredient, and fun beer overall. i love these guys!
