a really rad brew here, the best i had when i visited the brewery this week, and done in collaboration with uberbrew in montana, not sure the connection here, but i love those guys. a really ambitious recipe, with things like shiitake mushrooms, kelp, green tea, sesame seeds, and some other interesting stuff. its delicate but really complex, clean on the fermentation, fruity, and oddly hoppy, maybe some sorachi ace in here, i get that dill and lemon complexion to this. subtle ginger and maybe lemongrass notes too, herbaceous and botanical, a gin type character too, very fresh. its oddly well integrated for all the ingredients in here, i get the seaweed greenness and light saltiness to it, a bright citrus grapefruit thing, and an estery belgian or french saison strain, lots going on but it all really works. i dont get a ton from the mushrooms, but i am okay with that. this is dry and bubbly and really refreshing. i love this, such a weird recipe, but extremely well executed overall, this really is special stuff. i hope they keep making it, its one of a kind!
