Cube Cuvée #1 represents the first in a new series of beers for us. Two years ago, we began stashing beers away in barrels to use in the production of blended sour beers that would include significant aging character. We finally have enough of these old barrels that we can begin to include them in blends. For this first release, we have selected barrels of 16 month old brown sour ale and 4 month old golden sour. Something in the ballpark of a Flemish Red, CC1 is refermented in the keg for a soft carb, and shows beautifully balanced dried fruit notes and a complex, oaky tartness. Draft only, for now.

On tap at Cultivate coffee and tap house. Appearance has short-lived off white head atop a reddish-orange beer. Not much aroma but a little tart and barrel character. Taste is initially acidic and woody then finishes with bright fruit and refreshing tartness. Would get again.

Wasn't my favorite Grimm but it also isn't my favorite style so I rated the best I could based on style. Could drink but would choose other options if allowed

had on tap at Proletariat / NYC

poured into Teku glass

smell - raisiny, dried fruit, slight oak

taste - so well balanced. rich tasting but light, soft bubbly mouthfeel. mildly sour but a hint of sweetness. the flavors are deep, dried fruit, cherries, raisin, dried apricot but with a light acidity. refreshing and smooth.

loved it, don't see it very often but wouldn't pass up the chance to drink it again.

Pours a dark brown color.
Lot more chocolate and dark fruits than I was expecting, nice cherries. Nose a little lighter but taste is good. Medium body, very smooth.
